The bar, a eight metre long dark stone counter, welcomes you to take a seat. It is covered in pressed tin-plates, antique ceilings from old Argentinian Palaces in the Haussmann style.

The soft velvet sofas, designed by Pascale Lauber?s ‘ID Living’ and realized in South Africa comfort you in a relaxed atmosphere with contemporary artwork on the walls. For more privacy, take a seat in our salon ornated by an imposing fireplace.

The primary goal of Bar 700 is to become the best cocktail bar in Ostuni and the surrounding region. To achieve it, the owners have sought out the best talents in the art of mixology. The two creative bartendenders Leonardo Giorgini and Luisiana Colella will guide you through an unique experience, designing bespoke cocktails based on your tastes.

Leonardo, born in Rome, has become well-known in recent years thanks to his previous experience in his own local cocktail bar which quickly became a reference point for cocktail lovers in Ostuni.

Luisiana, from Bari, has graduated in food science and technology. She is also an expert in botany and fermentations. A young woman with many bright ideas.


These two young talents work in perfect harmony with the project’s general philosophy, i.e., they aspire to kick off their Salentoshire,an affectionate nickname for our regional wisdom, into the international spotlight.

Whether it?s an artisanal liqueur of the Amari and Rosoli Distillery in Gravina di Puglia or the Masseria Il Frantoio from Ostuni, the two bartenders are meticulously selecting ingredients from local suppliers.

If you?re expecting a classic cocktail list, you will be surprised. The two mixologists will serve unique cocktails such as Guacito, a cocktail based on yellow tomato pulp from Torre Guaceto, local homemade ricotta mousse and from chilli filaments or a Verdelite, prepared with local laurel liqueur and tincture of dried figs and almonds.?Why not try Puglia?s gold drink?made from white wine macerated with lemon, olive leaves, and gentian.
